Vegan Peanut Butter Bars (Gluten free)

These three-layer peanut butter bars are vegan, gluten free and full of flavors. This recipe comes together with only 7 ingredients and make a lovely treat!

Vegan Peanut Butter Bars (Gluten free)
Makes about 16 bars

For the crust:

1 ½ cups fine blanched almond flour
3 tablespoons coconut oil, melted
2 tablespoons pure maple syrup
1 teaspoon vanilla extract
¼ teaspoon sea salt

For the peanut butter layer:
2/3 cup natural, creamy peanut butter
1/3 cup pure maple syrup
1/4 cup coconut oil, melted
1 teaspoon vanilla extract

For the chocolate layer:
3/4 cup non-dairy dark chocolate chips
1 tablespoon coconut oil
Sea salt for sprinkling (optional)


Preheat oven to 175 C. Line an 20×20 cm square pan with parchment paper.

For the crust: in a bowl, whisk almond flour, maple syrup, coconut oil, vanilla extract and salt. Stir well to combine until a crumbly dough forms. Transfer to pan and press evenly with your fingers. Bake for 10-12 minutes. Remove from the oven and let cool.

For the peanut butter layer: in a medium saucepan over low heat, add peanut butter, maple syrup, coconut oil and vanilla extract, and stir for about 2-3 minutes,  until caramel becomes glossy  and all ingredients are melted and combined. Pour over cooled crust and freeze for at least 15 minutes or the peanut butter layer is set.

For the chocolate layer:  in a small saucepan over low heat, melt chocolate and coconut oil. Pour over the cooled peanut butter layer and spread evenly. Refrigerate for an hour until set. Cut into 16 bars, sprinkle sea salt if you wish and enjoy!

Keep them in a container in the fridge for about 5 days.
