Strawberry and Basil Soda

Starting the week with a refreshing drink. Ripe strawberries turned into a lovely homemade strawberry soda.

500 gr strawberries trimmed
Juice of 1/2 lemon
1/2 cup basil leaves, loosely packed
1 cup sugar
Carbonated water

Place strawberries in a blender and pulse until smooth. Strain through a sieve or, pushing juice through with a spatula. Discard leftover solids.

Pour strawberry juice into a liquid measuring cup and measure about 1 cup, adding water to reach 1 cup if necessary.

Pour juice into a saucepan and add lemon juice, basil and sugar. Heat mixture over medium heat until boiling. Simmer 5 minutes, stirring frequently. Remove from heat and let mixture cool. Strain syrup through a sieve or into a clean container and discard leftover solids.

To serve, spoon 2 tablespoons of syrup into a glass, top with carbonated water and ice and stir well. Taste and add more syrup or carbonated water, if desired.
